I Can't Believe it's not Steam Beer! 2 - Dark Steam

I made this beer the first time to clear out all of the little bits of malt that I had lying around. Turned out that this is a GREAT beer! This is a recipe for 3.5 gallons, so you'll need to scale everything up to do a full-sized batch

I used a mixed infusion/decoction mash with rests at 148F for 50 minutes and 156F for 20 minutes.

Ingredients
  • 2.5 lb USA 2-row pale
  • 1 lb 6.5 oz Muntons ex. light Dried Extract
  • 1 lb DWC Aromatic
  • 0.625 lb Czech Vienna
  • 0.75 lb USA Crystal
  • 0.25 lb Weyermann Dehusked Chocolate
  • 0.25 lb USA Carapils
  • 0.25 lb USA Wheat
  • 0.625 oz U.S. Liberty Pellet, 2.8 HBU's, boil 70 min
  • 0.125 oz U.S. Mt. Hood Pellet, 0.5 HBU's, boil 60 min
  • 0.125 oz U.S. Liberty Pellet, 0.6 HBU's, boil 15 min
  • 0.125 oz U.S. Liberty Pellet, 0.6 HBU's, boil 2 min
  • 0.5 tsp Irish Moss, boil 15 min
  • Wyeast 2112 California Common or White Labs San Francisco Lager

  1. Initial Boil Volume: 4 gal
  2. Final Volume After Sparge: 3.5 gal
  3. O.G.: 1.055
  4. typical F.G.: 1.016
  5. typical ABV: 5.2
  6. Color: 30.9 MCU or 14.2 SRM
  7. IBU's: 25.97
  8. BU:GU Ratio: 0.471
  9. Boil for 120 minutes
  10. Although not strictly necessary, it's nice to lager for 5 weeks between 34 and 39F
