Summer Ale

This is a light, refreshing ale. It has very low bitterness, with a thirst-quenching tartness from the lemon zest. It is all-extract, so it's very quick, too.

Ingredients
  • 4 lb Alexanders Pale Syrup Extract
  • 3 lb Muntons Wheat Dried Extract
  • 1 oz Saaz or Hallertauer Tradition Pellet, 3.6 HBU's, boil 60 min
  • 0.5 oz Saaz or Hallertauer Tradition Pellet, 1.9 HBU's, boil 5 min
  • 1.0 tsp Irish Moss, boil 15 min
  • Zest from 1.5 large lemons, about 1 oz, boil 15 min
  • 1.0 oz Coriander, crushed, boil 5 min
  • 2.0 g Grains of Paradise (a.k.a. Paradise Seeds), crushed, boil 5 min
  • Wyeast 1056 American Ale yeast or similar (use a starter as always)

  1. Initial Boil Volume: 2 gal
  2. Final Volume After Sparge: 5.0 gal
  3. O.G.: 1.050
  4. typical F.G.: about 1.009
  5. typical ABV: about 5.6
  6. Color: 7.8 MCU or 5.3 SRM
  7. IBU's: 13.42
  8. BU:GU Ratio: 0.263
  9. If possible, lager at about 39F for 4-7 weeks for a smoother flavor
